Holiday Recipe Project with Thermomix

If you are not familiar, Thermomix  is a blender / food processor / stand mixer that also cooks, sautés and steams - it is basically my sous chef in the kitchen. For the past couple of months I have been working with them to create my very own holiday recipe booklet! This booklet is filled with some of my very favorite holiday recipes, made especially for the Thermomix. In the meantime, I wanted to share some images of the recipes and get you all excited about this partnership. Thermomix   truly has become one of my favorite appliances in the kitchen - it saves me so much time which I love because it frees me up to do other things like hang with family and friends (and don’t forget Chumley!). I have even gotten my husband in on using it, which is a huge feat!

If you have a Thermomix or are thinking about getting one here is one of my favorite recipes to make in it - my savory apple and onion tartlets. Perfect for the holiday parties that are coming our way.

Savory Onion and Apple Tartlets

  • 1 oz. olive oil
  • 13.5 oz  yellow onions, halved and quartered (from about 2 onions)
  • Kosher salt and fresh ground pepper
  • 2 Tbs. unsalted butter
  • 1 lb. tart apples, peeled and sliced 1/4” thick
  • 1 tsp. sugar
  • 1 sheet frozen puff pastry dough, thawed
  • 1 egg beaten with 2 Tbs. water
  • 1/2 cup crumbled blue cheese
  • 1 Tbs. chopped fresh thyme
  • Flaky sea salt

Place the oil and onions into mixing bowl. Chop 2 sec/speed 5.  And cook without measuring cup 10 min/250°F./reverse/ speed 1.  Scrape down the sides of the mixing bowl and cook a further 10 min/250°F./reverse/ speed 1.  Removed caramelized onions and keep warm.

Place the apples, butter and sugar in the Into mixing bowl and cook 7 min/250°F/reverse/speed 1. Transfer apples to a bowl and set aside.

Preheat oven to 400°F. Line two baking sheets with parchment paper

Roll out puff pastry on lightly floured countertop into an approximately 10” x 10” square. Cut the puffed pastry into 2” squares. Brush each square with egg wash. Top each square with a tablespoon of caramelized onions, followed by tablespoon of apple mixture. Top with blue cheese and thyme. .

Bake for 22 to 25  minutes or until puff pastry is golden brown.

Serve warm with flaky sea salt.

Makes 25 - 2” tartlets
