Sheet Pan Sausage, Broccoli, and Sweet Potatoes
This is one of my go -to easy weeknight dinners when I don’t feel like cooking. It comes together really quickly and is healthy and nourishing.
Feel free to choose your own type of sausage, I really like the turkey kielbasa but if you wanted pork or chicken sausage that would work too. The only requirement is that it is cooked through when you buy it, that way you can cook it on a sheet pan. If raw sausage is all you have, then don’t cut it into bite sized pieces, keep it whole and put it in the oven with the vegetables after they have been cooking for about 15 minutes.
Sheet Pan Sausage, Broccoli, and Sweet Potatoes
1 bunch broccoli, cut into bite sized florets
2 sweet potatoes, cut into spears
3 Tbs. olive oil
salt and pepper
12 oz. turkey kielbasa, cut into 2” pieces
Serve with whole grain mustard
Preheat oven to 400°F. Line a sheet tray with parchment paper.
Toss the broccoli and sweet potatoes with the olive oil and a large pinch of salt and pepper. Roast the vegetables for about 25 to 30 minutes, tossing halfway through, or until fork tender and golden brown.
On the same sheet pan, add the sausage and continue roasting for about 10 minutes or until the sausage is warmed through.
Serve warm with a dollop of whole grain mustard
Makes about 3 to 4 servings.
