Bacon and Peach Flatbread

  • 2 oz bacon, cut into 1” pieces

  • 1 onion, thinly sliced

  • 1/2 lb store bought raw pizza dough

  • 1 peach, thinly sliced

  • 1 ear corn, shucked and kernels removed

  • 1/2 cup crumbled goat cheese

  • garnish with basil

Pre-heat oven to 450°F.

In a medium size saute pan, render the bacon over medium low until crispy. Remove the bacon from the pan and set aside on a paper towel lined plate.

In the same pan saute the onion over medium low in the bacon fat until soft and caramelized, about 10 to 15 minutes.

Assemble the flatbread by hand stretching or rolling out the pizza dough on a parchment lined baking sheet. Top with onions, bacon, peaches, corn and goat cheese.

Bake the flatbread for about 10 to 15 minutes or until the crust is golden brown.

Serve the flatbread warm topped with fresh basil.

Makes 1 flatbread.
