Oven Fried Chicken

  • 2 cups panko breadcrumbs

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 1 tsp. smoked paprika

  • 1 stick butter, at room temperature

  • 1 whole chicken broken down into 8 pieces

  • Serve with roast vegetables, lemon, and cilantro or parsley

Preheat an oven to 450°F. Line a sheet tray with a rack.

In a medium shallow bowl, add the panko. Set aside.

In a small bowl combine the butter, salt, pepper, and smoked paprika. Rub the butter over the chicken pieces then press into the panko. Place all of the chicken pieces onto the prepared sheet tray. Roast chicken for 35 to 40 minutes or until an internal temperature reaches 165°F on a meat thermometer. Let rest for 10 minutes before serving.

Serve with roast vegetables, a squeeze of lemon, and a sprinkle of cilantro or parsley.
