Lettuce Cups with Ground Turkey in a Soy Ginger Sauce

  • 1 Tbs. toasted sesame oil

  • 2 cloves minced garlic

  • 1 tbs. freshly grated ginger

  • 1/4 cup soy sauce

  • 1/2 cup hoisin sauce

  • Juice of 1 lime

  • 1/2 onion diced

  • 2 green chilis, chopped

  • 1 cup green beans, cut into bite sized pieces

  • 1/2 lb mushrooms, roughly chopped

  • 1 lb ground turkey

  • Serve with lettuce cups

In a large pan over medium heat warm the sesame oil. Add the garlic and ginger cook for 30 seconds. Stir in the hoisin sauce followed by the soy sauce and the lime juice. Cook for another 30 seconds then carefully remove the sauce from the pan.

In the same pan add the oil followed by the onion, green chilis, and green beans. Cook for 4 to 6 minutes or until the vegetables are fork tender and the onion is translucent. Add the mushrooms and cook for another 2 to 3 minutes or until the mushrooms begin to soften. Remove from pan but keep warm. To the same pan, adding more oil if needed, add the ground turkey and cook until browned about 4 to 6 minutes breaking up large pieces.

Reserve about 1/4 cup of the hoisin and soy sauce mixture for a dipping sauce then pour the rest in the pan with the turkey, adding in the vegetables as well. Cook for another 1 to 2 minutes until the sauce is coating the ingredients and the filling is warmed through.

Serve the turkey mixture on top of large pieces of lettuce with a dollop of Sriracha and a squeeze of lime.
