Salty Honey Pie

  • 1 recipe pie dough (THIS recipe is my favorite)

  • 1 stick/4 oz. unsalted butter, melted

  • 1/2 cup granulated sugar

  • 1 Tbsp cornmeal

  • 1/2 tsp salt

  • 2 tsp vanilla extract

  • 1/2 cup honey

  • 3 large eggs

  • 1/2 cup half and half

  • 1 to 2 tsp flake sea salt for finishing

Preheat oven to 350°F.

Make pie dough according to recipe. Roll out the pie dough on a floured surface. Using the back of a rolling pin, carefully place the pie dough into a 9” pie plate. Crimp edges and brush the edges of the pie with an egg wash. Place pie plate in the fridge.

In a bowl whisk together butter, sugar, cornmeal, salt, vanilla, honey, eggs, and half and half. Whisk well.

Pour filling into the prepared pie plate and place pie plate onto a sheet tray.

Bake pie for about 45 to 50 minutes or until center is puffy and the pie crust is golden brown. Remove pie and let cool completely before serving.

Makes 1 - 9” pie.
