Pasta alla Vodka

  • 1 -12 oz box of dried pasta

  • 2 Tbs. olive oil

  • 1 onion, diced

  • 2 cloves garlic, minced

  • pinch of red pepper flakes

  • kosher salt

  • 3/4 cup vodka

  • 1 - 28 oz. can tomatoes

  • 1/2 - 3/4 cup cream (depending on how creamy you want it )

  • 1/4 cup grated Parmesan cheese plus more for garnish

  • Garnish with fresh parsley, oregano or basil.

In a large pot of boiling water cook the pasta according to the packaging instructions. Save 1/2 cup of pasta cooking liquid before straining. Keep warm.

In the same pan warm the olive oil over medium heat. Add the onion and saute until soft, about 4 to 6 minutes. Add the garlic and red pepper flakes and continue cooking for another 30 seconds. Turn the heat to low and add the vodka and continue to cook until reduced by half, about 1 to 2 minutes. Add the tomatoes and reserved pasta water and cook for about 4 to 6 minutes until the sauce is reduced by half. Add the cream, Parmesan cheese and a large pinch of salt . Add in the pasta and toss well to combine

Serve the pasta topped with a little more Parmesan cheese and fresh herbs.

Makes about 3 to 4 servings.
