Herby Olive Oil Roasted Salmon with Lemon and Tomatoes

  • 1 lb salmon filet, pin bones removed

  • salt and pepper

  • 1/2 cup olive oil, divided

  • 1 cup cherry tomatoes, halved if large

  • 1/2 lemon, thinly sliced

  • 1 cup chopped soft herbs (cilantro, parsley etc), shallots, and/or green onions

  • Serve with rice or crispy potatoes

Preheat oven to 425F.

In a shallow oven proof pan add the salmon and sprinkle with salt and pepper. Drizzle with 1/4 cup of the olive oil then scatter the tomatoes and lemon around the salmon. Place the herb mixture on top of the salmon and drizzle with the remaining oil. Roast for 10 to 12 minutes or until the salmon is flaky and a knife can be easily inserted without any resistance.

Serves 2 to 4 people
