Leftover Mashed Potato Waffles

  • 2 cups leftover mashed potatoes

  • 2 eggs

  • 1/4 cup milk

  • 1/4 cup flour

  • 1/2 tsp. baking soda

  • 1/2 tsp. baking powder

  • 1 cup cheddar cheese

  • 1 cup crispy bacon (optional)

  • 1/2 cup green onions, thinly sliced

Preheat a waffle griddle to medium.

In a large bowl mix the mashed potatoes, eggs, and milk until smooth.

Fold in the flour, baking soda, baking powder, and pinch of salt.

Add the cheese, bacon, and green onions and stir until barely combined.

Depending on the size of your waffle iron, use a 1/2 cup scoop and scoop out batter and place on waffle griddle. Cook for about 5 to 7 minutes or until waffles are golden brown. Repeat with remaining batter and serve warm.
