Friday Night Personal Pan Pizza

  • 2 cups all purpose flour

  • 1 tsp. salt

  • 2 1/4 tsps (or 1 packet) of instant yeast

  • 3/4 cup of water (plus more if needed)

  • Olive oil** (see note about olive oil)

  • 3/4 cup store bought pizza sauce

  • 2 cups shredded cheese of your choice (I used mozzarella)

In a large bowl add the flour, salt, instant yeast, and water. Using a wooden spoon stir together, adding more water if needed, until a rough dough ball comes together.

Remove the dough from the bowl and place on a clean counter. Sprinkle with a little flour if needed if it is sticky, then knead the pizza dough until smooth, about 3 to 5 minutes. (You will know dough is ready when it is soft and the top is smooth).

Place dough in a clean bowl, drizzle with a little olive oil, then cover with a towel and allow dough to rise for an hour or until doubled in size.

Preheat oven to 425°F.

Drizzle olive oil into the bottom of a 10” cast iron skillet or oven safe pan.

Punch the dough down then place into the cast iron skillet. Press the dough out until it reaches the edges of the pan. Cover with a kitchen towel and allow to proof again for 30 minutes.

When ready to bake, top the dough with your favorite store bought pizza sauce followed by the cheese. (You can add any and all additional toppings here too).

Bake the pizza for about 20 to 25 minutes or until the crust is golden brown and the cheese is bubbling.

Remove and let sit for 10 minutes before serving.

Makes 1- 10” pizza (enough for 3 to 4 people, depending on how hungry everyone is).

*Note on olive oil. Make sure you like the taste of your olive oil. Since these are such simple ingredients, the flavor of the olive oil will come through. If you don’t like olive oil or would prefer a neutral oil, avocado oil would be great here.
