One Pan Roast Salmon with Tomatoes, Feta, and Olives

  • 3 or 4 - 6 oz. pieces of salmon

  • salt and pepper

  • 2 cups cherry tomatoes, cut in half if large

  • 1/4 cup black olives, pitted and cut in half

  • 1/4 red onion, thinly sliced

  • 1/2 cup feta, cubed into 1” pieces

  • 1/2 cup olive oil

  • 1/2 lemon, thinly sliced

  • Garnish with fresh herbs

Preheat oven to 425°F.

In a 9 x 13” oven safe pan or dish, lay the salmon pieces skin side down and sprinkle with salt and pepper.

Scatter the tomatoes, olives, red onion, and feta around the salmon. Drizzle the olive oil all over the salmon and vegetables.

Scatter lemons on top and roast in the pre-heated oven for 12 minutes or until salmon is cooked through.

Serve warm.
