Zucchini and Kale Pizza

Zucchini and Kale Pizza

  • 1 lb store bought pizza dough. (I used this homemade recipe if you have the time)

  • 1 onion, diced

  • 1/4 cup plus 2 Tbs. olive oil, divided

  • kosher salt

  • 3 cloves garlic, minced

  • Zest and juice of 1 lemon

  • 3 Tbs. butter

  • 3 Tbs flour

  • 1 cup milk

  • 1/2 bunch kale, ribs removed and torn into bite sized pieces

  • 1 small zucchini, sliced into 1/2” rounds

  • 4 oz mozzarella

Preheat oven to 425°F. Let store bought pizza sit at room temperature while you prep the rest of the recipe.

In a medium saute pan, cook the onions until soft and translucent, about 4 to 6 minutes. Add the garlic and continue to cook for another 30 seconds. To that pan add in the butter and melt. Add the flour and cook for 30 seconds. Add the milk and large pinch of salt and whisk well mixture is thick and coats the back of a spoon. Set aside.

In a large bowl toss together the kale and zucchini with 2 Tbs. olive oil and a large pinch of salt and pepper.

Place the remaining olive oil in a 10” cast iron pan. Place the dough in the pan and press it out so it reaches the edges. Top with a large spoonful of the sauce and spread into an even layer., followed by the kale mixture. Scatter the mozzarella on top of the kale and place pizza the stove top and cook over medium for 5 minutes.

Transfer the pizza into the preheated oven and bake for another 25 minutes or until the kale is wilted and the edges of the pizza are golden brown.

Let cool slightly then serve.
