Oven Baked Paella

Oven Baked Paella

  • 8 oz pre-cooked sausage (such as kielbasa), sliced 1/2” thick

  • Olive oil

  • 1 onion, diced 

  • 1 red bell pepper, thinly sliced 

  • 2 cloves garlic, minced

  • 1 tsp. crumbled saffron 

  • 2 cups jasmine rice

  • 4 cups vegetable stock or chicken stock

  • 1/2 lemon, thinly sliced 

  • Garnish with parsley 

Preheat oven to 425F

In an oven safe and stove top safe cast iron fry pan, add the sliced sausage and 2 tablespoons olive oil and saute until the edges of the sausage are golden. Remove and set aside.

In the same pan add the onion and the red bell pepper and saute over medium heat until the onion is soft and translucent. Add the garlic and cook for another 30 seconds. Add the saffron and rice and stir until the rice is coated with the onion mixture. Add the sausage and stock and bake for 25 minutes.

Garnish with chopped parsley and fresh lemon slices and serve immediately. 

Makes about 4 to 6 servings.
