Sesame Noodles with Shrimp and Roasted Peanuts

  • 12 oz dried spaghetti ( or rice noodles)

  • 1/2 lb shrimp, peeled, deveined, tail removed  

  • 3 Tbs. toasted sesame oil

  • 5 Tbs. soy sauce

  • 3 Tbs. rice vinegar

  • 2 Tbs. peanut butter

  • 1 Tbs honey 

  • 2 Tbs finely grated ginger

  • 1 tsp. garlic powder

  • 1 cup crunchy vegetable like cabbage, cucumber, carrot etc. 

  • 1 cup roasted peanuts 

  • Hot sauce, sesame seeds, and fresh herbs as needed 

Cook pasta according to packaging. Strain and rinse with cool water to stop the cooking. Set aside.

Toss the shrimp with oil then cook over medium in a saute pan. Remove and and let cool.

In a large bowl, add the sesame oil, soy sauce, rice vinegar, peanut butter, honey, ginger, and garlic powder. Mix well. Add the noodles, chopped shrimp, crunch vegetables and toss well so all the noodles are covered by the sauce.

To with peanuts and well as hot sauce, sesame seeds, and herbs if using.
