Grilled Chicken Salad with Peaches, Bacon, and Creamy Ranch Dressing

When I first met my husband all he had in his fridge was string cheese and beer.  Fast forward 12 years and now he is the one asking for salads for dinner.

Grilled Chicken Salad with Peaches, Bacon, and Creamy Ranch Dressing

  • 1 lb chicken breast

  • 1 cup Healthy Choice Power Dressing Creamy Ranch  

  • 4 cups salad greens such as butter lettuce or little gems

  • 1 cup sliced peaches

  • ½ cup crumbled bacon

  • ½ cup fresh corn

  • ¼ cup toasted almonds

  • Garnish with fresh soft herbs.

 

In a medium bowl combine the chicken and ½ cup Healthy Choice Power Dressing Creamy Ranch . Toss well, cover with plastic wrap and place in the refrigerator for up to 12 hours.

When ready to make the salad remove the chicken from the fridge.

Preheat a stove top grill pan or cast iron pan over medium heat. Add olive oil and grill the chicken for about 10 to 12 minutes or until a meat thermometer reaches 165F. Remove chicken and let rest for at least 5 minutes, then cut into bite sized pieces.

In a large bowl toss together the salad greens, peaches, bacon, corn, almonds, and chicken. Toss well with Healthy Choice Power Dressing Creamy Ranch  and garnish with fresh herbs.

 Serve immediately.
