Sweet Potato Pie

Sweet Potato Pie

  • 2 ¾ cup mashed sweet potatoes (from 2 lbs whole sweet potatoes)

  • 4 Tbs. unsalted butter, melted

  • 3/4 cup brown sugar

  • Pinch of ground nutmeg

  • 1 tsp. cinnamon

  • 3 eggs

  • 1 tsp. vanilla

  • 2 1/4 tsp. baking powder

  • 1/4 cup heavy cream 

  • 1 tsp. kosher salt

  • 1 - 9” blind baked pie dough in a 9” pie tin

  • egg wash

Wrap sweet potatoes in foil and roast for 2 1/2 hours (this can be done the day before and stored in the refrigerator) Let cool slightly then remove flesh and press through a food mill or ricer. Whisk together the sweet potatoes, melted butter, brown sugar, cinnamon nutmeg, eggs, vanilla, baking powder, cream, and salt 

Pour into pie dough, brush with egg wash and bake at 325°F for 30 minutes or until the filling is barely firm.

Let cool completely before serving.
