Chicken Lo Mein

Chicken Lo Mein

  • 1/2 cup soy sauce

  • 1/4 cup rice vinegar

  • 1 Tbs. oyster sauce

  • 1 Tbs. sesame oil

  • 1 Tbs sugar

  • 1 lb boneless skinless chicken breast

  • 2 cloves garlic, minced

  • 1 shallot, minced

  • 2 Tbs. ginger minced

  • 1 cup thinly sliced carrots

  • 1 cup thinly sliced snap peas

In a small bowl combine the soy sauce, rice vinegar, oyster sauce, sesame oil, and sugar. Set aside

In a large non stick pan or wok, heat the oil over medium heat. Add the diced chicken and cook until cooked through, about 5 to 7 minutes. Remove and set aside

In the same pan, adding more oil if needed, add the garlic, shallot, and ginger and cook for 30 seconds. Add the carrots and snap peas and cook for another minutes.

Return the chicken to the pan, along with cooked noodles, and the sauce. Toss well and garlic with scallions/fresh herbs/crunchy cucumber sticks (whatever you have works)

Makes about 4 servings.
