Broiled Shrimp with Tomatoes and Feta

  • 1 lb shrimp, peeled and deveind

  • 4 Tbs. olive oil, divided

  • salt and pepper

  • 1 tsp garlic powder

  • 1 tsp dried oregano

  • 1 tsp. dried thyme

  • 1 shallot, minced

  • 2 cups cherry tomatoes

  • 4 oz feta cheese, crumbled into large chunks

  • Serve with crusty bread

Place oven rack close to oven broiler. Turn on broiler

Toss shrimp with 2 Tbs olive oil, salt, pepper, garlic, thyme, and oregano. Set aside.

In a saute pan, warm the remained 2 Tbs. olive oil. Add the shallot and the tomatoes and saute for 3 to 5 minutes or until they just become soft.

Remove from heat and carefully place shrimp into the pan in an even layer. Dot the feta around the pan.

Broil the dish for 5 minutes or until shrimp is cooked through. (keep an eye on it since everyone’s broiler is different)

Serve immediately with crusty bread.

Makes about 3 to 4 servings.
