Chicken, Zucchini and Feta Sliders with Tzatziki

  • 1/2 onion, minded

  • 2 Tbs. olive oil

  • Kosher salt

  • 2 cloves minced garlic

  • 1 zucchini, shredded

  • 1lb ground chicken

  • 1 egg

  • 1/2 cup panko breadcrumbs

  • 1/2 cup feta cheese, crumbled

  • 1 cup shredded cucumber

  • 1/4 cup plain Greek yogurt

  • zest and juice of 1 lemon

In a large saute pan add the onion and 2 Tbs. olive oil. Add the onions and cook for about 4 -6 minutes or until super soft. Add garlic and cook for another 30 seconds.

Add the onions to a bowl along with shredded zucchini, ground chicken, egg, panko, feta, and a large pinch of salt. Using wet hands form the mixture into 6 small patties and refrigerate for about 30 minutes.

In a small bowl make the tzatziki by mixing the cucumber, the Greek Yogurt, lemon juice, lemon zest, pepper, and salt. Set aside.

Cook the sliders s in about 2 Tbs. olive oil over medium in a large saute pan flipping once about 8 - 10 minutes or until a meat thermometer reads 165°F.

Serve the chicken burgers on a toasted bun with a schmear of the tzatziki and some lettuce.

Makes 6 sliders.
