Sheet Pan Supper with Gnocchi, Italian Sausage, and Broccolini
1 lb Italian (chicken) sausage
8 oz broccolini
1 cup cherry tomatoes
1/2 onion, thinly sliced
1 lb fresh gnocchi *
Garnish with Parmesan cheese and fresh soft herbs
Heat oven to 425°
In a bowl combine the sausage, broccolini, tomatoes, onion, and a large pinch of salt and pepper. Mix well and place on a sheet tray in an even layer.
Roast in the oven for 14 minutes.
While the sausage and broccoli is roasting, toss the gnocchi with the remaining olive oil.
Carefully scatter the gnocchi on top of the sausage and broccolini.
Return to the oven and bake for another 20- 25 minutes or until the vegetables are fork tender and the edges of the gnocchi is golden brown.
Top with Parmesan cheese and fresh basil and serve warm.
*If you are using shelf stable gnocchi, roast the gnocchi for the entire cook time.
