Miso Maple Salmon Sheet Pan Supper with Green Beans and Peppers
1 Tbs. maple syrup
1 Tbs. miso paste
1 Tbs. sesame oil
1 Tbs. soy sauce
1 Tbs orange juice (optional)
Squeeze of half a lime (save other half for serving)
kosher salt to taste
4 - 4 oz salmon filets
1 lb green beans
1 red bell pepper, cut into strips
2 Tbs olive oil
Serve with rice and fresh herbs
In a bowl mix together the maple syrup, miso, soy sauce, orange juice, and lime juice.
Lay the salmon in a shallow dish or bowl and sprinkle with salt then pour marinade over the top. Let sit for at least 30 minutes or up to 8 hours.
Preheat oven to 425° F.
When ready to eat toss the green beans and red bell peppers with olive oil, salt, and pepper. Place on a parchment lined baking sheet in a even layer and roast for 10 minutes.
Remove and carefully place the salmon on the sheet tray, scooting the green beans to the side to fit the filets if needed.
Roast for another 12 minutes or until the salmon is cooked through and the green beans are tender.
Serve over rice or quinoa with fresh herbs.
Makes about 2 to 3 servings.
