I have mentioned it here before but a couple summers ago (well 9 summers ago but it seems like yesterday) I was fortunate enough to backpack around Southeast Asia. The timing worked out that both my husband (then fiance) and I could take the time off and get lost in Vietnam, Laos, Cambodia, and Thailand. The trip will always be one of my favorites for many reasons, but one of the main reasons was the culinary awakening I had during our travels. We ate so many new flavors and new dishes that I completely fell in love with all of the Southeast Asian cuisine. We had many food moments that were life changing but one in particular was our first banh mi sandwich in Vietnam.

Grilled Romaine Caesar Salad

I find that food tastes exponentially better when made and eaten outside, especially on a warm summer night. It is pretty hard to beat a summer BBQ. And I know when people think about BBQs they think of heavy (but delicious) cuts of slow cooked meat. Fridge Foraging: Smoked Salmon Rice Bowls

I swear that most of the food that I eat comes in bowl form. Who needs a plate when you can just pile everything into a huge bowl!

In this week’s fridge foraging you all chose the smoked salmon bowl over the coconut curry stuffed sweet potatoes. The bowl is filled with brown rice, smoked salmon, pickled vegetables, avocado, and served with Sriracha mayo. Hearty and healthy and proves that food in bowl form just tastes better.

Morning Glory Muffins

Right before baby Olivia was born I made a batch of these muffins and they have been a lifesaver for breakfast. I froze them individually and then microwave one for breakfast each morning. I love how in 30 seconds I can have breakfast so I can turn my attention to a hungry baby. They are full of flavor as well as carrots and zucchini to make them a little healthier.

Chocolate Fondue

One Pot Pasta with Sun Dried Tomatoes and Burrata

With this baby on the way I have started to think more about easy cooking. I have a feeling that - for a little while anyway - the days of leisurely cooking in the kitchen may be over.  I have so many friends who say they don't have time to cook or are too busy with their kids to make dinner. Well this one if for them! It might be one of the easiest one pot pastas out there and it all comes together in less that 20 minutes. 15 if you can get that water boiling faster. So keep a lookout for more one pan wonders and sheet pan suppers, I am super excited to develop and share more of those recipe.
