I am not a huge fan of lasagna with red sauce. I don’t know what it is, but I rarely make it. But when it comes to a lasagna with béchamel sauce (white sauce made with butter and flour) I am totally on board. This butternut squash lasagna is the perfect example - layers of butternut squash, creamy béchamel sauce and cheese makes one delicious lasagna.Read More
I will gladly admit it, even though I eat meat, I LOVE a good veggie burger. LOVE.
Sometimes when you don't want a heavy hamburger, a good ol' veggie burger with all of the fixings totally hits the spot. When I first moved to Nashville I had a version of this veggie burger a local vegan restaurant Avo. I loved their use of lentils and walnuts to create a savory vegetable based burger.
It took me a minute to get this recipe developed and posted. I kept threatening to make it for Fridge Foraging but it was never chosen. Since there was a lot of feedback that people still wanted it, I decided to finally develop it.
We had it on a Friday night and watched a movie and I swear it tasted just like takeout, only a little healthier.Read More
Almost all of my food inspiration comes from dishes that I have eaten or experienced in some way. I then take those flavors and put my own spin on them. I recently had the chance to experience a street corn Caesar salad at 1000 North in Jupiter Florida. I am a huge fan of Caesar salads and who doesn't love Mexican Street corn! Loved the two flavors together so I decide to come up with my own version.
One of my favorite stalls at the farmers market each week is the mushroom stand. It is guaranteed to wow and amaze anyone who passes by. The gentleman who mans the stand always has the usual mushrooms like shiitake or oyster but often times he will have the most gorgeous unusual mushrooms that are so unique looking, they almost look like they don’t belong on this planet! From creamy chanterelles, to lion’s mane, to the fluorescent orange of lobster mushrooms, I love that almost no two mushrooms look alike.Read More
I grew up eating black eyed peas on New Year's Day for good luck. We didn't have a ton of food traditions growing up but black eyed peas (and never ending football) on NY day was the tradition. I have added in collard greens and cornbread just for good measure. Write here...Read More
I am a big fan of pizza and could probably eat pizza (or tacos) pretty much everyday of the week. Although that sounds delicious, it is probably not the most healthy of diets. Enter caulfilower pizza. When I want pizza but want one that is a little more nutritious, this is what I turn to. Although it is not exactly like pizza dough, this cauliflower pizza is pretty darn close.
Feel free to put all of your favorite toppings on the crust. I like old school pizza sauce, cheese and basil but the sky is the limit in what you can top with pizza crust.Read More
Chicken pot pie is my ultimate comfort food. Ever since I was a kid, this has always been my favorite recipe….well let’s be honest, I was just in it for the biscuit topping.Read More
I love this tasty chicken tacos recipe. It is one of my go to easy recipes that I love and don't forget about all the fixings to go on top like cheese, pickled red onions and avocado. I could eat Mexican food pretty much every night of the week.Read More
Felt like I hadn't done a proper pie in a while, so without further adieu, presenting my peach and blackberry pie with a herringbone lattice crust. Yes I know I got a little crazy with the crust but you can swap out for a regular lattice crust or just a double crust.Read More
We don't have a lot of food traditions in my family, but fried chicken on the 4th of July is most definitely one of them. Growing up we had store bought (from Publix! and you all know my love of all of publix's prepared food!) then head down to watch the fireworks. Here is my version of that fried chicken so there is no excuse to have fried chicken (don't worry I think this year I am going to be close enough to a Publix to grab some before the fireworks begin)Read More
This Thai chicken satay combines all of the flavors that I love in Southeast cooking (and yes I know there are a lot them ) It also involves my love of coconut milk. I love using coconut milk in so many dishes because it adds a sweet richness to whatever is begin cook - savory and sweet. And don't get me started on this spicy peanut situation. I could drink that sauce it is so freaking good. Peanut butter is mixed with lime juice, soy sauce and all sorts of other yummy flavors. Be prepared to be obsessed.Read More
The title of this recipe should be Pizza: The World’s Most Perfect Food. Or maybe Pizza: A Love Story. Because it kind of is right? I am always down for pizza (and maybe tacos but we are focusing on the pizza right now!)
I got a request for my favorite pizza dough and here is it. I am also showing you my favorite way to cook pizza at home - in a cast iron skillet! That is until I get my own wood fired pizza oven, but sadly that seems to be a long way off.Read More
I worked in a Michelin starred restaurant right after cooking school. Well it was technically called a stage and I didn't get paid, so I am not sure if you can call it work, but it sure seemed like work! After that experience I gained a whole new appreciation for those that cook in restaurants. It is hard work!Read More
I have posted this recipe for carrot soup before but because I love it so much I wanted to adapt it slightly by adding some roasted chickpeas. I don't know about you, but sometimes when I eat soup I am pretty much still hungry almost immediately after finishing it. It is sometime not hearty enough and doesn't seem to fill me up. Since it is so good for you, I decided to top it with some roasted chickpeas adding some heartiness all the while still keeping it healthy.Read More
I am not one for gimmicky food - you know trendy food that is trying to be different just for the sake of being different. Like for example carrot hotdogs, if I want a hot dog, I will eat a hot dog. Maybe that is a bad example because vegetarians want hot dogs sometimes ( I would imagine) but you know what I mean. Or here is a better example - a ramen burger. A ramen burger is a hamburger that uses ramen noodles instead of a bun. Consider me old and uncool but that is not my jam at all. Give me an amazing hamburger or an amazing bowl of ramen - just don't give me a hybrid to both of them.Read More
I was cleaning out my fridge recently, something that I need to do more of, and discovered a bottle of buffalo wing sauce. I bought this bottle for a recipe development project a couple weeks ago and since I was in search of a relatively healthy dinner, I decided to make some buffalo chicken in my Instant Pot. I served it with a vinegar based cole slaw and a pretzel hamburger bun and it hit the spot.Read More
